Add the gelatin to 1/4 cup of cold water and let it bloom for 5 minutes.
Cut the vanilla pod lengthwise with a knife and scrape out the seeds.
In a saucepan, heat the cream, sugar and vanilla seeds over medium heat while stirring.
Stir in the bloomed gelatin to the cream until it has completely dissolved.
Remove the cream from the heat and stir in the buttermilk or milk.
Pour the mixture into ramekins or oven-safe glasses, leaving enough room for the layer of coffee jelly.
Refrigerate for at least 2 hours.
Place gelatin in 2 tbsp. of cold water and let it bloom for 5 minutes.
While the gelatin is blooming, dissolve the sugar in the coffee.
Dissolve the gelatin into the hot coffee.
Pour the coffee over the panna cotta and refrigerate again for at least 2 hours.
