Delicious, caffeinated, and nutritious. This breakfast version of cold brew coffee popsicles combines all your favourite healthy breakfast staples into an all- in-one early morning treat.
In a blender, mix all the popsicle ingredients.
Pour the mixture into the popsicle moulds up to three-quarters full, tapping the tray slightly so as to avoid air bubbles.
Cover the moulds, insert the popsicle sticks and place in the freezer for 2 hours.
In a small bowl combine the hot maple syrup with the granola.
Remove the moulds from the freezer and pour the granola mixture on the bottom layer.
Return back to the freezer for at least 4 hours.

In a small saucepan, whisk together the sugar, cornstarch, cocoa powder and cream (or milk).
Heat over medium heat until boiling, add the cold brew and mix well.
Remove from heat and let cool.
Pour the mixture into the popsicle moulds.

In a measuring cup, mix the milk and 1/2 cup of sweetened condensed milk.
Pour mixture into the popsicle moulds up to one-third full and add around 8 chocolate chips.
Cover the moulds, insert the popsicle sticks and place into the freezer for 2 hours.
In the same measuring cup, mix the cold brew coffee and 3 tbsp. of sweetened condensed milk.
Remove the moulds from the freezer and pour the cold brew mixture over the first layer.
Place back in the freezer for at least 4 hours.
